Few have heard that the word appetizer comes from Lebanese cuisine, where it can serve not only as an appetizer but also as a main dish. The important thing is that it is prepared according to the old Arab traditions, according to which a large variety of spices continue to be mixed in one dish today.

Among the most common Lebanese appetizers is the so-called. Kafta, which is a warm minced meat appetizer cooked in the oven. Before we understand how Kafta is prepared, we must mention that ras el hanut is inevitable. This is a pre-made mixture of spices, including turmeric, cinnamon, black pepper, cloves, cardamom, nutmeg and more.

As it is difficult to find this typically Arabic mixture in the shops, you can prepare it yourself by adding a pinch of the above spices. The minced meat can be lamb or beef, but in no case pork.

This is the case, at least according to all Arabic recipes for Kafta, and the reason is that the Prophet Muhammad forbade the consumption of pork. Also in the preparation of Kafta potatoes, tomatoes and cretaceous nuts may not be present, but the most important thing is the correct seasoning with ras el hanut. And here is the recipe for Kafta:

Kafta (baked minced meat in the oven, served as an appetizer in the Arab countries and especially in Lebanon)

Necessary products: 750 g minced lamb, 200 g tomato paste, 2 potatoes, 2 onions, 4 tomatoes, 1 lemon, 1 tbsp butter, 70 g pine nuts, a few sprigs of fresh parsley and fresh coriander, 2 tbsp ras el hanut, 5 tbsp olive oil, salt and pepper to taste.

Method of preparation: Mix the minced meat in a bowl with the finely chopped onion, coriander and parsley and season with 2 tablespoons of olive oil, salt to taste and raspberry. Mix very well and leave to stand for at least 30 minutes to absorb all the spices.

The pan in which you will bake the minced meat is greased with butter and the minced meat is poured into it. Bake in a preheated 200 degree oven for 20 minutes.

Separately prepare the tomato puree sauce, lemon juice, 3 tablespoons olive oil, salt and pepper to taste. Allow to simmer on the hob for 10 minutes, stirring constantly.

Peel the potatoes, cut into slices and fry in fat. Arrange on the baked minced meat, and put the sliced tomatoes on them, pour the tomato sauce over everything, sprinkle with the nuts and bake again for another 15 minutes in a preheated oven at 200 degrees. The Kafta prepared in this way is ready to serve.
