The European Commission has approved the addition of two high-quality rural products from Bulgaria to the EU list of protected food products. These are the Panagyurishte sausage and Elena's favorite fillet.
There are another 1,200 protected products on this list - some of which have a protected designation of origin, protected geographical indications or are designated as traditional specialties guaranteed.
The two selected delicacies will be marked with the logo of foods with a traditional specific character.
The recognition of our traditional meat delicacies from Brussels began five years ago. The association Traditionally Raw Dried Meat Products has applied for protection of five products. The association includes a total of 21 meat processing enterprises.
So far, Gorno Oryahovitsa sausage has received protection for geographical origin - thus the delicacy can be prepared only by certain companies, in this case three companies from Gorna Oryahovitsa.
Elena fillet is a raw dried delicacy made from whole meat - because it is made with pork, the fillet was difficult to produce during the Ottoman Empire.
According to some sources, a fillet-like product was prepared in Gabrovo by a man named Stoyan Arnaudov in 1855. However, it was sold at a high price of 2090 groschen.
Panagyurishte sausage is also an extremely popular and popular delicacy in our country, which is prepared from pork and beef, which are then seasoned with cumin and white or black pepper.
The production of the sausage started in the 19th century, and it was called sausage because onions were added to the sausage at the very beginning. Later, onions fell away as an ingredient in delicacies, but the word sausage is still used to describe the delicious product.
It was standardized in 1958. Until now, only the Gornooryahov sudzuk was present in the European register. Besides Elena fillet and sausage, Trapezitsa roll, Trakia neck, rose oil and others will also fight for a place in the list.
