Salmon trout is a hybrid species of fish, which is the result of many years of efforts by a team of Yugoslav geneticists. The salmon trout is actually an adapted form of the American trout that breeds in the upper reaches of the White Drin River.
Through complex crosses, scientists have been able to obtain a hybrid of salmon with American and Balkan trout. After many years of selection, they have managed to create a species that is able to reproduce independently in the rivers and reservoirs of the former Yugoslavia.
After the events in our neighbor and the war in Kosovo, the project was developed only around Dospat, where for several years now our fishermen have been importing stocking material for salmon trout.
Salmon trout reproduces during the period April-May. For years, a team of scientists from the Bulgarian Academy of Sciences has been observing the salmon trout in Dospat. They have found that fish reproduce quite naturally.
Characteristics of salmon trout
Externally salmon trout bears all the hallmarks of the American, but quickly increases in weight and even reaches the size characteristic of some species of salmon, while having the reproductive capacity of the Balkan trout. Salmon trout is larger than ordinary trout, its flesh is pink (like salmon), has fewer bones and more flesh.

Method of preparation: Cut the fillet into pieces, season with lemon juice and aromatic spices and leave for 10-15 minutes to absorb the aroma well. Heat a grill pan or Teflon pan and place the fish - first bake on the side with the skin to release its own fat and after a few minutes turn on the other side. Serve the fragrant fish with baked potatoes and a glass of chilled white wine.
