Before extracting the juice, the fruit should be washed well. Delicate fruits such as strawberries, raspberries, blackberries are washed by placing in a wire basket and immersed 7-8 times in a bowl of clean water, then rinsed in a light shower.
Fruits that are sprayed with detergents / apples, pears, etc./ are washed with warm soapy water and a soft brush or towel, then rinsed with plenty of running water.
Washed fruits should be drained well from the water and crushed into small pieces. Various juicers, presses and grinders are used to produce juice.
The juice obtained by pressing is filtered through a sieve. It is best to preserve fruit juices by pasteurizing them in dark, high-pressure bottles.
Fill the bottles with water and boil for 15 minutes, then allow to cool. The juice in the bottles should be heated to 80-85 degrees.
