Spetsle is a type of noodle made with eggs. This type of noodles is part of German traditional cuisine. The name itself comes from the word spatz, which means little sparrow. Apart from Germany, this noodle is also prepared in Austria, Switzerland, Hungary, as well as in the regions of Alsace and South Tyrol.
Recipes for spezle are found in the first quarter of the 18th century. Nowadays we associate it exclusively with German cuisine. The annual production of spetsle in Germany amounts to over 40,000 tons. Obviously, this is one of the nation's favorite foods.
Now its production is mechanized, but before it was prepared by hand or with the help of a spoon. Later, a special tool was invented to make German fresh noodles, which resembled a grater.
The main ingredients of the spezle are: eggs, flour and a little salt. Usually the Germans follow an unwritten rule for making delicious noodles - Always put one egg more than the number of people who will eat the noodles.

By tradition spetsle is made by cutting the dough into thin and long strips, similar to worms. Then put in boiling water. When they rise to the surface of the water, it means that they are ready. Once they have hardened slightly and have already formed, they are taken out of the water and drained.
The spezleto can be consumed on its own, drizzled with melted butter. But it is also a wonderful side dish for local dishes.
