For this purpose a deep strainer or metal basket and a vessel with 7-8 liters of boiling water are needed. Put the peppers in a strainer - no more than 0, 5 kg at a time, and immerse in boiling water until completely covered.

The water should boil again for about 1 minute and continue to boil throughout the blanching. Time is of the essence. When finished, remove the vegetables, soak them in cold water and drain.

Peppers can be frozen and roasted. Bake, peel and put in plastic bags. The only condition for freezing is the way of arrangement. They need to be lined up tightly to take up less space, as the corners of the bags usually protrude.

Storing frozen peppers at home significantly reduces vitamins, but heat treatment does not interfere with the preservation of dyes, which are powerful antioxidants.
