Focaccia is a traditional flat Italian bread, with various ingredients added to it such as onions, olives and various spices. Whole grain focaccia with vegetables
Necessary products: 200 g wholemeal rye-wheat flour, 150 g white flour, 200 ml warm water, 50 ml olive oil, 1 packet of dry bread yeast, 1/2 tsp. sol.
About the topping: 50 ml olive oil, 1 tbsp. mix of spices of your choice (ground sun-dried tomatoes, garlic, basil, oregano, black pepper, sea salt), 1 small zucchini, 5-6 cherry tomatoes, 2 onions, 2 tbsp. onion oil, 1 clove garlic, 5-6 leaves of fresh basil.
Method of preparation: The flour is sifted with salt. Add the yeast to it and mix well. A well is made in the middle. Slowly pour the olive oil and a little water. Knead a sticky dough, which is transferred to a floured surface. Knead until it stops sticking.
Put the dough in a greased bowl. Cover with a towel and leave to rise in a warm place for about an hour. The finished dough is rolled out into a rectangle or circle and placed in a large pan greased with olive oil. Cover the top with a towel and leave for another 30 minutes.
The spices are mixed with the olive oil. Cut the onion into crescents and fry in 2 tbsp. olive oil. Remove from the heat and allow to cool. Cut the zucchini and cherry tomatoes into thin slices and the garlic into slices.
Preheat the oven to 200 C. Prick the dough with your fingertips, forming small pits. The surface of the focaccia is smeared with half of the mixture with olive oil and spices. Top with caramelized onions, zucchini, tomatoes and garlic. Sprinkle with the remaining mixture of olive oil and spices on top.
Put the focaccia in the oven and bake for 30 minutes. Once cool, cut into pieces.
Focaccia with onions
Necessary products: 400 g flour, 350 ml lukewarm water, 1 tsp. dry yeast, 1/2 tsp. salt, 1 tsp. sugar, 80 g soft mass.
For garnish: 3-4 large heads of old onions, salt, pepper, 5-6 tbsp. olive oil, fresh spices of your choice (thyme, rosemary, sage, basil, oregano, etc.)
Method of preparation: The onion is cleaned and peeled. Cut into crescents and place in a large bowl. Season with salt and pepper and marinate with olive oil. Add the coarsely chopped fresh spices and leave for 2-3 hours to taste.
In a bowl, mix the sifted flour with the yeast, salt and sugar. Add the water and mix well. Soft butter is added to the sticky mixture and stirred again.
The resulting sticky, thick dough is left to rise. It can be used at once, in a large tray, or several times. From the resulting dough can be obtained three focaccia with a size of 25 - 30 cm.
Cover the bottom of the pan with baking paper and sprinkle generously with flour. Put part of the dough in it and turn it once in the flour. She spread her fingers until a thin loaf formed. Arrange the pickled onions on top.
Preheat the oven to 200 C. Bake for about 20 - 25 minutes. The focaccia is served hot.
