The main ingredients from which the paella is prepared are rice, saffron and olive oil. It is customary to supplement with various vegetables, chicken, rabbit or seafood. The name of the dish comes from the dish in which it is prepared. This is a large flat pan with two handles.

For the first recipe, which is with seafood, you need: 500 g of boiled mussels with shell, 150 g of large shrimp, 400 g of fish fillet, cut into pieces, 1 head of old onion, finely chopped, 2 cloves of garlic, chopped finely chopped, 2 red peppers, 250 g rice, 200 g frozen peas, 1/2 tbsp. saffron, 1 liter of chicken broth, 50 ml of white dry wine, olive oil, salt, pepper, juice of 1/2 lemon.
Heat 2 tablespoons of olive oil in a pan and fry the seafood. Salt with salt and pepper and pour into another bowl. They are set aside. In the same pan pour a little more olive oil and saute the onions and peppers. Add the garlic and rice. Mix well and pour the wine.
Pour the saffron into the chicken broth to dissolve. As soon as the wine is absorbed from the rice, pour a little of the saffron broth and add the peas.
After the rice absorbs the liquid, add a little of the broth, leaving about 1/4 of it. Finally, add the mussels, shrimp, fish and the last 1/4 of the chicken broth. The dish is moved to a preheated 180 degree oven for about 20 minutes.
If you want to cook paella with chicken or other meat, use the above method of preparation. The vegetables are the same.
Many people like to eat vegetarian paella. For it you will need: 1 tsp. saffron rice, 2 tsp. vegetable broth, 1 red pepper, cut into strips, 150 g green beans, 150 g large ripe beans, pre-cooked, 2-3 red tomatoes, 1 onion, 3 cloves garlic, 80 ml olive oil, salt, a pinch of saffron, lemon.
Dilute the ground saffron with a little broth and boil lightly. Heat 1/3 of olive oil in a pan, add the pepper and fry until golden brown. Remove and allow to cool and then peel. Fry the green beans with a little garlic and onion and remove from the pan.
Add the tomatoes and fry together with the onions for a few minutes. Add the rice, both beans and vegetable broth. Frying continues, but over low heat.
