1. You are using the wrong variety of potatoes

Not every type of potato is suitable for mashed potatoes. You should choose this variety, which has a higher starch content, because with it your puree will become fluffy and smooth. In addition, it will taste and flavor more easily. In no case do not take red or white varieties, because with them you can easily get not mashed potatoes, but the terrible potato paste.

2. Do not salt the water

The process of flavoring mashed potatoes begins with the cooking of potatoes. When the potatoes are cooked, the starch granules in them swell and absorb water and, if you have added salt. This way you will not need to add much at the end of the process and your puree will be well flavored.

3. Put the potatoes in hot water

Proper cooking is to put the potatoes in cold water, salt them, heat them to boiling and then reduce the temperature of the stove. Otherwise, if you put them in hot water, they will boil unevenly - the outside will fall apart and the inside will be raw.

4. Add the flavorings straight from the fridge

Allow the butter to rise to room temperature before melting it in the hot potatoes. This will make it easier and better absorbed.

5. Excessive processing of potatoes

When the potatoes are mashed, the starch is released. The more you process the potatoes, the more starch is released. When too much starch is released, the potatoes become sticky and unattractive. You should not process them with a mixer or blender, because this method is too aggressive and the final effect is not good.

6. Prepare them too early before serving

Staying the puree in the fridge, especially for a longer period of time, is not a good idea. In this way, it will acquire a taste resembling cardboard, which will not be pleasant to anyone.
