Nitrosamines, on the other hand, are formed by the reaction of nitrites with secondary amines; nitrites, in turn, are found in sausages, bacon and any ready-to-eat meat products intended for permanent storage. That is - the consumption of cruciferous vegetables neutralizes the carcinogenic effect of substances taken with other foods.

In addition, as an antioxidant, sulforaphane protects the gastric mucosa from the destructive effects of Helicobacter pylori - a gram-negative bacterium that inhabits the stomach and duodenum and is responsible for the appearance of peptic ulcer, gastritis and duodenitis.
