It's Easter soon and it's time to fast again. Many people observe complete abstinence from animal products and do so with the full belief that they are closer to God. Others switch to a vegetarian diet simply out of a desire to purify their bodies at the end of winter.
Whatever the reason, however, everyone is aware that colorful and diverse, vegetarian cuisine is far from boring and tasteless. And not just during fasting. Over time, it has proven to be not a temporary trend, but a real way of life that inspires more and more great masters in the kitchen.
With it, the vegetables return to the center of the plate and are no longer just a side dish for meat and fish. A representative of world cuisine, vegetarian cuisine is inspired by different parts of the planet and makes her fans keep traveling. Hummus, falafel, lentils, vegetable curry… are some of the most offered to vegetarians.
Here are a few 100 percent vegetarian recipesthat will benefit you by fasting time, but also whenever you choose.
Two-color quinoa salad
To prepare this extremely tasty salad, so that it lasts for at least six, you will need about 250 g of quinoa. Mix it - white and red - for better taste. Cook it for ten minutes in water, which is twice the volume and is slightly salted. Allow to cool in the water in which you boiled it, then drain it.
Rinse a red chicory (or any other healthy and fleshy salad). Save the largest leaves and cut the core. Season it with 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 tablespoon of lemon juice, salt, pepper and 1 finely chopped onion. Add the quinoa and stir. Arrange the preserved chicory leaves in a bowl and decorate with quinoa. Serve chilled.
Burger with spices
Pour 400 g of red lentils in boiling salted water and cook for about ten minutes. Already on the fire, add about 200 g of pre-cooked bulgur, leave to cool and drain. Mix, adding two or three tablespoons of flour, 4 heads fried until golden in shallots, a clove of garlic and 30 g of fresh ginger.
Optionally add chopped spices, curry or any other spice of your choice. Leave the mixture in the refrigerator for at least an hour. Then make 6 burgers and lightly fry them - for about three minutes on each side in hot olive oil. Bake in the oven and 6 burgers, cut in half. Put in them a "steak" of lentils and bulgur, fresh lettuce leaves, a piece of tofu, tomato rings and red onions.
Strawberry melba
This recipe is for those who do not observe strict fasting, but rather have decided to limit meat. The recipe can be completely lean if the milk is not of animal origin.
Make ice cream from yogurt. To do this, beat 6 whole yogurts (cow, goat or soy), with 200 g of sugar (you can also use agave syrup or rice syrup).
Add the juice and grated rind of a large lemon and prepare it with an ice cream machine according to the specified time. Then make ice cream balls and divide them into six bowls. Cover with strawberries, raspberries and blueberries.
