The Russian dish, made from tender pieces of beef and drizzled with "Bof Stroganov" cream sauce, was invented for a culinary competition.

The first recipe for the dish was officially recorded in 1861 in Elena Molokovets' cookbook.

But the dish was previously created by a chef serving the Russian diplomat and General Count Pavel Alexandrovich Stroganov (1795-1891). He is the last of the Stroganov family and is known for the fact that the University of Odessa was founded on his project.

Recipes for fried meat with sour cream, however, are quite typical of medieval Russian cuisine.

The dish "Bof Stroganov" is tender beef with mushroom sauce and sour cream, served with rice or pasta.

The pieces of meat are first fried and stewed with onion and tomato cream. The dish can be garnished with potatoes, but in the original Russian recipe it is served with noodles or buckwheat porridge.

The sauce usually contains more cream, which is why it has a white to gray color. A subsequent variation of this famous culinary masterpiece is Chicken Stroganov, which is prepared with tender chicken pieces and is a good option for people who prefer lighter meats.

The dish first appeared in the late nineteenth century, not earlier than the second half of the 90s.

After the fall of Imperial Russia, the dish gained great popularity in China, before the outbreak of World War II. And after 1950, it became a favorite of Americans.
