Peruvian cuisine ranks third in sophistication, exoticism and diversity - just after French and Chinese cuisines.

We can't help but start our culinary tour of Peru with the traditional dish called the selfish.

It has been prepared since the distant past to the present day and has to some extent become Peru's calling card to the world. Selfish is made with fish, mussels, shrimp, peppers, onions, lemon juice. The vegetables are cut into juliennes.

In general, fish delicacies are very often used in Peruvian cuisinebut that's not all. We must not forget the fact that Peru is home to four of the ten cereals that exist worldwide. We are talking about quinoa, kiwi, corn, canoe.

Spicy dishes are not alien to them at all - they like to add many different spices to their dishes to give them a wonderful and different flavor. And with the spiciness - be careful, some dishes are especially spicy.

But let's not get distracted from our main task and continue to wander through the depths of culinary Peru. The next dish, which we can traditionally call, is prepared with beef hearts, which are strung on cane strips. It's called antikucho and is grilled.

The alcohol they use the most is a typical grape brandy and is called pisco sauce. Another type of drink, again alcoholic, traditional for the area, is Uncle Morada. It is produced by fermenting corn in pre-salted water.

Beer and wine are no strangers to Peruvians either. Don't forget to order aguahe juice. Typical of the region is a soup made from beef, bacon, cabbage, chickpeas, potatoes and dried fruits, called puero.

Perhaps the most valuable in Peruvian cuisine are the attempts to preserve it, to preserve its authenticity from the past, to continue the tradition. But that's not all.

Simultaneously with the observance of their culinary customs, Peruvians manage to keep up with the times and take advantage of all culinary innovations. That is why Peru has one of the best cuisines in the world.
