Sushi, there is no dispute, is the symbol of Japanese cuisine. Along with samurai, shoguns and origami, it is one of the emblems of all of Japan and the amazing Asian culture. Delicious bites of fish and rice have long had their place in restaurants around the world, they are increasingly popular in the urban culinary environment in our country.

And did you know that unlike many other popular foods, there is a famous person who is considered creator of sushi. And not only is he famous, but he is recognized by history as such. His name is Yohei Hanaya and he is officially called the father of nigiri sushi - the kind of sushi that is made by hand that you have probably tried. It is believed that this is the beginning of the modern look and style of sushi.

In fact, the roots of sushi come from ancient China, from a dish that includes fish wrapped in fermented rice. The main reason was for the fish to be stored and preserved for a long period of time. The rice preserved the meat for months. In this practice, however, the rice is fermented and discarded after the fish is eaten.

However, in the Edo period (1603-1868), Japan decided to change this dish, creating a new type of sushi called haya sushi, which allowed fish and rice to be eaten at the same time.

In the 18th century in the country there was a real boom of traveling shops, reminiscent of today's fast food restaurants.

The story goes that after selling his own for a while sushi as an outpatient, Hanaia opened his own restaurant, called Sushi of Yohei, which specializes in sushi, which is prepared by hand.

Yohei Hanaya (1799-1858) acquired the title of discoverer of nigiri sushi, although in this period in Japan there were other masters of the specialty of fish and rice. He invented nigiri sushi as part of an effort to develop a new menu.

According to The History of Nihonbashi Uogashi, in the early 19th century, the Japanese did not pay much attention to tuna. But when Hanaia served it with soy sauce, which also gained popularity during the Edo period, the attitude toward tuna changed to the extent that tuna is one of the most important sushi fish today.

The visual beauty of nigiri sushi, combined with its freshness and speed of preparation, make it a real bestseller. Hanai's sushi was pretty close to what we can find and try today.

Hanai sushi became so popular that all restaurateurs wanted to make it in their restaurants. And this is not forgotten today, when often new dishes are copied by competitors.

Although Hanaya was widely recognized as the creator of Japan's most representative dish, there was a period in which the government was not impressed by its fame, but rather took aim at it.

History tells that in 1833 the country was hit by a great famine. Because of him, the Reforms of Tempo (1841-1843) were introduced, which wanted to calm the situation. Hanaia and other sushi masters are said to have been arrested since dried violated laws relating to excessive costs.

Fortunately, the reform campaign failed, laws were no longer obeyed, and drought returned to the tables in Japan.

Today, Yohei Hanaya continues to live through his creation, nigri-sushi, a favorite around the world. There is also a chain of restaurants bearing his name. In the menu you can find various dishes with noodles, soups and of course sushi.
