You would immediately wonder why we import peppers from abroad at all, given that they grow well in our country as well. The reason lies in the fact that they are often cheaper for traders, who focus mainly on imports from Turkey, Greece, Spain, Italy and Macedonia, and in winter - from Jordan, thus limiting our pepper markets. more and more. In practice, it is very difficult to get rural peppers unless we grow them ourselves.

Still, if you stop by a village, you might get lucky and come across a grandparent selling their pepper, usually on display at a roadside stall. Do not hesitate to buy such rural peppers at all, because they will hardly contain any pesticides, and their taste has nothing to do with kupeshki peppers.

Rural peppers in fact, they are one of the oldest varieties of peppers and are especially typical for Southwestern Bulgaria and in particular for the Kyustendil region. They have a strong aroma and can be both green and red or orange.

Rural pepper is characterized with the fact that it has a much thinner skin than kupeshki peppers, which is why they do not irritate the gastric mucosa. They are extremely rich in fiber, vitamin C, vitamin B6, vitamin E, beta-carotene, magnesium, zinc, iron, potassium, calcium and others. The rural pepper variety gives us energy and strengthens our immunity, while having a detoxifying effect.

You can cook with rustic pepper practically everything, but it is good to take into account the fact that due to their irregular and completely natural shape they are not always suitable for filling.

Most importantly, that the thinner skin and flesh of the rural pepper are a prerequisite for them to peel a little harder than kupeshki peppers precisely because of their thin skin. You can easily deal with this if you sprinkle them with salt after baking.
