Quinoa is a great breakfast choice for vegetarians, vegans or anyone who just wants to eat a healthy cholesterol-free breakfast. All recipes for breakfast with quinoa are vegetarian, most of them are almost vegan and do not contain gluten, as quinoa is a gluten-free food.

Optional products: nuts of your choice (eg hazelnuts), linseed or coconut oil
Method of preparation: Combine the quinoa with your favorite milk and cook for about 10 minutes. Add the brown sugar and spices and heat for another 5-6 minutes until the quinoa softens. Mix with chopped strawberries and nuts as desired and enjoy this incredibly tasty and healthy breakfast.
2. Vegan chocolate-banana breakfast with quinoa and soy milk
This recipe is a healthy combination of protein, fiber and fruit, complemented by the amazing taste of chocolate.
Necessary products: 1/2 cup quinoa, 1 cup water, 2/3 cup soy milk, 1 tablespoon cocoa, 1 tablespoon maple syrup (or other sweetener: try agave nectar), 1 sliced or pureed banana
Method of preparation:Heat the quinoa and water for about 5 minutes. Then add the soy milk, stir, reduce the heat to medium and leave for 5-7 minutes until the liquid is absorbed and the quinoa softens. You may need to add milk or water. Once the quinoa is ready, pour into a plate and mix with the cocoa, maple syrup and banana. You will enrich the taste of this recipe if you add nuts, more fruit to your taste or even peanut butter. It all depends on your preferences and imagination.
3. Muffins with quinoa, eggs and spinach
This recipe is the perfect breakfast for vegetarians and lovers of vegetarian and healthy cuisine.
Necessary products: 1 cup quinoa, 2 cups water (or vegetable broth), 1 cup spinach, 1/2 head chopped onion, 2 eggs, 1/4 grated cheese, 1/2 teaspoon oregano, thyme and salt, 1/2 teaspoon garlic powder
Method of preparation:
Put the water and quinoa on the stove for about 10 minutes until the liquid is absorbed. Then remove from the heat and set aside. In a pan, sauté the onions until soft and add the spinach for about 2 minutes. Preheat oven to 180 degrees. Grease the muffin tin. In a bowl, mix the quinoa, onion and spinach, eggs, cheese and spices. Put the mixture in the muffin tin, being careful not to overfill. Bake for about 20 minutes and you already have a great start to the day.
