Pestil it is made by boiling the fruits (prunes) in water until the skins are separated. Also, if they have stones, they must be separated. The resulting mixture is then filtered through gauze or a strainer. The stones and scales are then separated. The inside of the prunes, which we have separated, is strained. A homogeneous mixture must be obtained.
Then pour into a deep saucepan and place on a hot plate. The purpose is to thicken further. This should be done on low heat, stirring occasionally.
The resulting thick fruit pulp is spread on a floured board or wooden board and allowed to dry. The drying of the fruit pulp is done in the sun and in a ventilated room.
It takes several days to dry. First it is dried on one side. When it stops sticking, it turns to the other side.
A well-dried pestle can be stored in a ventilated place for a long time.
