Bulgarian culinary traditions are an integral part of our history and culture. They are part of the customs, rituals and even the way of life of the Bulgarians both in the past and today.

Along with all modern foods that quickly became part of our daily menu, our table also features traditional Bulgarian dishes, whose recipes have been passed down from generation to generation.

There is no housewife who does not have her own family recipe for moussaka, stuffed peppers or tripe soup. However, there are forgotten Bulgarian dishes, whose names today sound like words from a pagan ritual - meles dolma, baedia, francano, lopushki.

Here are some of the most delicious but forgotten Bulgarian dishes:

Lamonia - This is a type of halva, which is prepared from honey, sugar, rice flour, butter and cream.

Kaden sponges - are extremely tasty and fragrant small cakes that are well syruped. In the middle of each is stuffed a nut - walnut, almond. In some parts of Bulgaria nuts are replaced by raisins.

Behind the Italian sound of the dish francano there are quite ordinary sifted crumbs, fried in butter and flavored with spices.

You should not miss to try and tarhana, which is an appetizing dish of sheep oil that is cooked with beans and finally thickened with corn flour.
