There are many novice cooks, and I believe not only beginners who have not heard of this wonderful caramel sweetness, used more and more often for making desserts. In short, dulce de leche is milk caramel. There are two main options for preparing it at home.
The first option is for those who have access to real homemade milk and have time to stir the mixture of milk and sugar often. The recipe is simple, but requires time and attention. Technology is important.
The ingredients you need are 950 ml of fresh milk, 200 g of sugar and 1/4 tsp. baking soda dissolved in 2 tsp. water.
You can add flavors of your choice such as cinnamon and vanilla. Some people even add a little sea salt to highlight the taste of caramel sweetness after the first note of salt.
The technology of preparation of dulce de leche is as follows: Pour the sugar and aromas into the milk and place on a hot plate, heated from moderate to strong temperature. Stir until dissolved and wait for the milk to boil, then remove from the heat for a while and add the soda dissolved in water.
Now is the time to recommend a deeper saucepan, as the milk will foam, mix it well, then return it to the hob. It should boil vigorously for 1 hour, stirring every ten minutes.
Reduce the heat after an hour and cook for another 20-30 minutes. Stir the mixture every 5 minutes for the first 10-15 minutes, and at the end you should start stirring constantly until the mixture thickens.
If you have used cinnamon on a stick or vanilla on a pod, after removing from the heat, strain it into a jar or where you plan to store it (in case you will not use it now) while it is still more liquid. When cool, it thickens further and is stored for about a month in the refrigerator.
Your other option for making dulce de leche is much easier. Buy cans with sweetened condensed milk and boil them directly with the boxes in a large pot of water.
Boil for about 2-3 hours, with a minimum of 2 hours, and you should always make sure that the water covers the cans, and if it evaporates, top up with hot water. After the time has elapsed, take the cans out of the water and leave them to cool. They are ready to open and consume.
The good thing about this option is that the shelf life of this milk caramel is very long, practically until you open the can, and after opening it can stay for about 1 month in the refrigerator.
And the easiest way to get this sweet is from the store. It probably won't be as unique and delicious as the homemade version, which you can always influence with your taste preferences, but it's still a good alternative.
