The Mole Poblano dish is traditional for Mexican cuisine and one of the prides of the exotic country. Making this specialty at home for Mexicans means a big celebration, birthday or just a special holiday.

The word "mole" comes from the typically Mexican dialect words "milli" and "molli", which means fiction. "Mole" is actually the sauce, which is the key part of the dish, while "Poblano" means just fried chicken.

In addition to this dish, Mole is used to prepare all kinds of meat, fried eggs, enchiladas and what not. If you also want to enjoy the fragrant Mexican cuisine, today we will introduce you to the way preparation of Mole Poblano.

The products you will need are 150 g of dried peppers (you can also use Bulgarian peppers with a few hot peppers), 250 ml. chicken broth, 200 g onions, 2-3 cloves garlic, 40 g almonds, 20 g peeled peanuts, 2 pcs. cloves, 1/4 tsp. black pepper, 1/4 tsp. cinnamon, 1 pinch of anise, 200 g of raisins, 50 g of bitter chocolate, 2 tbsp. oil, salt and 100 g of tomatoes.

To begin with, fry the peppers in the pan. During this time, lightly roast the nuts together with all the spices and then crush them (they can also be mashed) together with the raisins.

Boil the tomatoes and peel them while freeing them from the juice. Dissolve the chicken broth in 250 ml of warm water.

It's time to mash the tomatoes and peppers. During this process, begin to dilute slightly with half of the broth.

Then fry the finely chopped onion in a saucepan, where we gradually add the mashed tomatoes and peppers. Add the nuts and cook on low heat for another ten minutes.

We achieve the required density by gradually adding the rest of the broth, and finally season it all with pressed garlic cloves, grated chocolate and 2-3 pinches of salt.

The prepared aromatic sauce is served, as we said, with fried chicken.
