Wheat represents whole and unprocessed wheat grains that contain all three layers of the grain, including: outer husk (bran), germ and inner part (endosperm). Einkorn is the most ancient species of the group of roof wheat.
Wheat, and in particular einkorn, as most whole grains have a long list of beneficial properties for human health. Studies continue to show that their consumption can help reduce the risk of cardiovascular disease, type 2 diabetes and some cancers. It is good to give preference to whole grains, instead of consuming mainly their refined counterparts. This can have a positive effect on our immune system and weight control.
Whole grains are high in fiber and low in calories, full of vitamins and minerals. They are a particularly good source of manganese, selenium, phosphorus and magnesium. Wheat grains also contain lignans, phytochemicals thought to protect against breast cancer and prostate cancer. Einkorn, in turn, is valuable for the presence of vitamins such as A, B and E, proteins and minerals: zinc, manganese, phosphorus and magnesium. Zinc is especially important for women's health, digestive tract, eyes and skin.
To cook boiled wheat, you just need to pour 4/5 tea cups of water into the pot and wait for it to boil. For this amount of liquid it is necessary to add 1 teaspoon of wheat. Carefully rinse the beans in a colander under running water and add them to the boiling on the stove. Reduce it slightly and let the wheat simmer for between 45 minutes and an hour until the grains soften.
When preparing wheat, the cooking time varies between 20 and 30 minutes. If the wheat has not cracked, after removing it from the heat, leave it in the pot wrapped in a blanket for 1 hour. Then drain the excess liquid and spread the wheat grains on a clean and dry linen or cotton cloth so that they do not soak and do not drop a lot of starch afterwards. Still, it's not a pleasant feeling of grated wheat, is it? note that the einkorn is a more delicate product and you need to shorten its cooking. It should also be cooked over low heat.
Remember that you can slightly change the cooking time depending on what you plan to use the wheat or einkorn for. In a salad where you want to add a little al dente style, the beans should be left on the fire for a shorter time, and if you want to make a porridge, you will have to leave them to cook for a longer time to soften. completely.
