The first and most important step, of course, is harvesting. Sugar beet is harvested in late autumn and early winter. Beets are harvested by digging out of the ground. That is why, when delivered to specialized places for sugar production, it must be thoroughly washed and cleaned of soil and stones.
The sugar from the beets is extracted when it is cut into as many small pieces as possible. The more pieces, the more parts to extract. The extraction takes place in a diffuser, in which the beets stand for an hour and a half in warm water. The diffuser weighs several hundred tons when full of beets and water.
The diffuser is a horizontal or vertical container in which the pieces of beet move either at one end or the other as the water moves in the opposite direction. This is a process in which the more water moves, the stronger the sugar syrup, also called essence, becomes.
The pieces of beets that have passed through the container are still wet and there is still sugar in them. To do this, they go through a special press, which releases the maximum amount of sugar essence left in the pieces of beets. The liquid is returned to the Diffuser with the rest of the sugar essence, and the beet, which has become a pulp, is sent to special rooms, where it is dried and used to make pills.
To make the sugar essence suitable for making sugar, it must be thoroughly cleaned. This is done by the so-called carbonization process, in which small limestone particles are formed in the sugar mixture. These limestone particles collect everything that is not sugar, and after filtering the mixture is ready to make sugar, but too thin.
That's why it boils. This is done in a huge tray that can hold 60 tons of sugar syrup. During cooking, the water in the syrup evaporates completely and the syrup begins to form crystals. Once crystals form, the mixture of crystals is passed through a centrifuge to separate.
Once the sugar essence is separated from the crystals, the latter are dried with hot air, packaged and ready for delivery.
