It's summer again and the ice cream freezers are calling us. This year, however, in addition to the well-known ice creams with cream and milk, vegan ice creams made from entirely plant products can also be found in retail chains. This type of dessert has long been present in foreign markets, but only recently managed to find a place in our country. However, it quickly gained popularity.

Vegans, vegetarians and people who like to experiment with food like it because it is tasty, light and does not contain animal products. In addition, its content does not contain many of the harmful ingredients that can be found in most ice creams in stores (such as hydrogenated fats). Among the components of this type of dessert are usually almond milk, cashew milk, cocoa butter, coconut oil, soy.

Vegan ice cream can be found at a higher price in some specialty organic food stores. But in a cheaper version, they are already available in some restaurants in the capital or small neighborhood stores in the country, offering both ice cream on a stick and those in a waffle cone.

Vegan fruit ice cream

Necessary products: 1/2 tsp cashews, 300 ml coconut milk, 2-3 tbsp. cocoa butter, 3/4 agave syrup, about 300 ml of almond milk, 2 handfuls of raspberries or strawberries.

Method of preparation: Wash the cashews under running water and cover it with water in a ratio of 1: 2. Leave it to soak overnight. Then wash it again and mash it in a blender with the remaining ingredients without half the raspberries and cocoa butter.

Add the melted cocoa butter in a water bath and mash again. Mix the resulting smooth mixture with the remaining raspberries. Place in the freezer overnight, or until the ice cream is firm.
