Generally speaking, the mechanical treatment of an oil source is defined as unrefined oil. And vice versa - if chemicals or heat are applied, the resulting oil is refined.

Examples of unrefined oil is that made from olives, avocados, nuts, soft fruits. They are suitable for mechanical pressing without the use of any chemical or any other agents to aid in the extraction of the oil. No external heat is applied in this process - the only higher degree is the result of the friction of the products in the press.

Cold pressed oils are also part of the group of unrefined. Here, the oil is extracted mechanically, using a machine that applies pressure, not heat. And although it is created, it is minimal and rarely exceeds 49 degrees Celsius. This preserves the taste and nutritional content of the plant, fruit, nuts used for oil production, making the final product healthier.

Unrefined oils include those labeled raw / pure, virgin and extra virgin. And each one is different, showing how many times the main product has been pressed to make the oil.

It should be noted that oil labeling may be interpreted differently in different countries. For example, some companies call their oil extra virgin, given that minimal extraction (mechanical but also chemical) is used to make it.

The choice of cooking oil is in the hands of the buyer. Everyone has the right to choose this product that suits their taste. Just remember that refined fats are suitable for heat treatment, and unrefined fats are the right choice for salads and raw dishes.
