Method of preparation: The meat is washed and seasoned with garlic, salt and pepper. Melt the butter in a pan together with 1 tbsp. oil. Put the meat in the pan and fry for 3 minutes on each side. It is moved to a fireproof tray, large enough so that there is no free space around it.
Heat the remaining oil in the pan. Fry the onion in it for about 5 minutes. Add the tomatoes, tomato paste, oregano, basil and broth. Season with salt, pepper and sugar to taste. Allow to simmer for 15 minutes on low heat.
Pour the tomato sauce over the meat. Cover the pan with foil or the lid of the yen pot. Place in the oven and bake at 180 C for 25 minutes.
Grill function is turned on at the strongest. Each piece of meat is covered with a slice of mozzarella. Bake for another 3-4 minutes. The chicken is served garnished with olives and mint leaves.
