Onions delight us with their countless benefits. But we can not always consume it fresh. It is a must-have product for every kitchen, as it is part of the preparation of almost all dishes. Therefore, to replenish our reserves of vitamins and minerals, we can prepare homemade dried onions that we can use for years.
The procedure of drying onions is not laborious at all, as long as you are familiar with the basic steps. First of all, get a solid amount of onion, because when it dries, it reduces by more than half its volume.
Wash and clean the onion well. Some prefer to dry it whole, but it is best to cut it into pieces the size of a cook.
Choose a tray of the appropriate size and cover it with clean glossy paper or newspaper. It will absorb moisture and the onion will not stick to the bottom of the pan. Put the chopped onion inside and put in the oven at low temperature, at most 60-70 degrees.
The oven door must be slightly open to allow moisture to escape. The process must be constantly monitored. When the onion begins to peel off the newspaper at the bottom, begin periodic stirring.
This is done until it is completely dry, which depends on the amount of chopped onion. An indicator of this is that when it is squeezed between the fingers, its scale breaks. Great care must be taken not to burn.
Remove the prepared dried onion from the oven and leave to cool completely. During this time, it again absorbs a certain amount of moisture from the air, which makes the scales tough and elastic, rather than dry and brittle. Store in tightly closed boxes.
Dried onions are used in several ways. It can be put directly into the dish or pre-soaked in water. This is done to regain some of its original appearance. If it is to be fried, soaking is mandatory.
Dosage should also be exercised. A medium-sized onion is equal to 1 tbsp. dried. This is partly subjective, as it all depends on the variety of onion and how much water it contains.
