The dough for their kneading is standard and is prepared from 300 g of flour, 3 eggs, 1 tablespoon of olive oil and 1 teaspoon of salt. Knead until the dough is smooth and, if necessary, add a little water. The mixture is left for about 30 minutes and then rolled out. From the molds are made squares, in the center of which is placed the selected filling, closed diagonally, acquiring the shape of rings and boiled in salted water until they begin to surface.
The filling can be prepared from seasoned minced meat, from different types of cheese and yellow cheese, from olive paste, from caviar, from spinach and cheese, from ham or sausage with yellow cheese and much more. Once you have prepared your tortellini, you can choose what to pour over them so that they really acquire a perfect taste. Here are some options for sauces to tortellini:
Tomato sauce
Necessary products: 450 g canned or fresh peeled tomatoes, 1 tsp red wine, 1 onion, 3 cloves garlic, 1 tsp honey, 2-3 sage leaves, 1 bay leaf, 1 tsp basil, 1 tsp oregano, 3 tbsp olive oil, salt and pepper to taste.
Method of preparation: Finely chopped tomatoes are put together with all the peeled onions, sage, bay leaf and wine to neck. Once the liquid begins to evaporate, add the finely chopped garlic cloves and remove the onion, as it has already released its aroma. Shortly before the sauce becomes thick enough to water the tortellini, add the remaining spices and remove the bay leaf and sage.
Sauce with melted cheese and cream
Necessary products: 200 ml liquid cream, 1 package of melted cheese, 10 mushrooms, 3 tablespoons butter, salt, oregano and basil to taste
Method of preparation: The sliced mushrooms are stewed in butter together with the garlic. Reduce the heat and add the melted cheese until completely melted. Finally add the cream and spices, mix everything and the sauce is ready.
Sauce with cream, spices, arugula and parmesan
Necessary products: 1 small pack sour cream, 1 tsp basil, salt and pepper to taste, a few leaves of fresh arugula, 20 g Parmesan.
Method of preparation: Ready tortellini are arranged in the bowl in which they will be served, and the cream in which the basil is placed is poured on them. Mix everything well, sprinkle with coarsely chopped arugula and parmesan and is ready to serve.
