Lean vine greens with bulgur
Necessary products: 300 g bulgur, 1 onion, 1 carrot, 200 g mushrooms, 3 tablespoons olive oil, 2 tablespoons oregano, salt and pepper to taste, vine leaves for sarma.
Method of preparation: The bulgur is soaked for about 30 minutes and cleared of debris. In a separate bowl, fry the finely chopped onions and carrots, and then the chopped mushrooms. Once everything softens, add the bulgur, a little water and spices.
The stuffing prepared in this way is mixed again and tasted. After the liquid has completely boiled, fill the vine leaves with the mixture and arrange them in a pot, also lined with vine leaves. Add a little water and leave on low heat until the sarma is fully cooked.
Tabbouleh (Lebanese bulgur salad)
Necessary products: 250 g of bulgur, water for soaking bulgur, 3 lemons, 120 ml of olive oil, 5 tomatoes, 4 sprigs of fresh onion, a few sprigs of fresh mint and parsley, salt to taste.
Method of preparation: The bulgur is left to soak in water and then with the help of a sieve spoon the rubbish that rises to the surface is removed. After 30 minutes, drain and rinse several times.
Set aside and squeeze the lemons, which are mixed with olive oil and a pinch of salt. In a suitable bowl, boil the tomatoes so that they can be easily peeled and then cut into cubes.
Add the bulgur, finely chopped onion, parsley and mint. All products are mixed well and finally poured with the mixed olive oil and lemon juice. If necessary, add more salt.
