The first step in the preparation of pasta is the choice of pot. The Italians have special pots for cooking pasta, which consist of 3 parts: lid; the more interesting middle part of the pot, resembling a colander, in which the essence of the pasta itself is placed - the idea is that when the pasta is cooked, it can be drained with a simple movement; lower part in which the water or broth is placed.
If you do not have such a pot, it is not a problem to cook in an ordinary, as long as it has thin walls and a wide base and boil in a huge amount of water and follow the rule - at least 3 liters per 250 grams of dry pasta.
People usually do not use a large enough cooking vessel and enough water to boil the pasta. Another important rule is the addition of salt to the water - per 3 liters 1 tbsp. This is done so that the water washes away the starch that remains on the paste and it does not stick.
The paste must be put in boiling water. Do not add fat to the water, because later the finished paste will be too slippery to hold the sauce on itself and the final product will sit greasy.
As soon as you put the paste in boiling water, stir it. This prevents the paste from sticking to the bottom or walls of the container. Stir the pasta several times during the cooking process. If you are cooking with ready-made pasta, read the package for the required cooking time.
There are many testing methods if the pasta is properly prepared, but the best starting point is to read the package instructions. Each variety and brand of pasta has a different cooking time and this is indicated on the package. Long, thin noodles tend to cook very quickly, while smaller, thicker pasta tends to take a lot longer.
Start testing your paste about two minutes before the specified time to make sure. Looking for al dente, which means gentle but firm on the tooth. If your pasta is going to be cooked further in a saucepan, you can take it out of the water just before the al dente stage.
If you prepare the pasta yourself, you should know that fresh pasta is boiled for a shorter time (4-5 minutes). Squeeze out your pasta enough to remove most of the water, but don't let the pasta sit without water and dry out.

As it cools, the starch hardens and the paste sticks together.
Do not rinse the pasta under running water, because you will wash away the starch, which acts as a glue and helps the sauce to adhere to the pasta.
Add the pasta to the sauce - not the other way around.
