A modern kitchen would not be like this without high-tech tools that can make the cooking process more efficient and safe. Ceramic knives as a novelty in kitchen tools appeared relatively recently. They were first produced in Japan in 1985. The main raw material for their production is zirconium or more precisely zirconium powder.

The zirconium powder is placed in stamped forms, calcined at a temperature of 1500 degrees and so for 2-3 days - until we get the much-needed kitchen helper.

When buying ceramic knives, we are primarily interested in how different they are from steel ones, how practical they are and what are their pros and cons.

Some of the advantages of these knives are:

- Zirconium ceramics are absolutely harmless to the human body, the knives are hygienic, do not absorb odors and do not leave stains on them;

- the ceramic blade is not subject to oxidation, the products cut with them do not acquire a metallic taste and over time retains its original appearance;

- the ceramic knife is much lighter than steel, which is important for professional use;

- periodic sharpening is not required and can be done very rarely.

The disadvantages of ceramic knives are not many, but they are not to be overlooked

- quality ceramic knives are relatively expensive, ranging between 50-150 dollars on average;

- Zirconia ceramic knives are not suitable for cutting frozen and hard products and despite their impressive blade we must be careful with them because they are very susceptible to breakage;

- the knife should not be washed in a dishwasher and it is not desirable to be in contact with glassware;

- temperature changes affect the ceramic knives, and when washed with very hot water it is possible for the blade to crack.

Ceramic knives are distinguished by shape, size, color, price and various manufacturers.

The first thing you should look for when buying such a knife is the shape and size. Look at the handle, the blade, the shape of the tool and choose the one that is comfortable for you and that has maximum ergonomic characteristics. It is not possible for a knife to be suitable for any cutting, so you need to know exactly what use you will need it for. Ceramic knives, like steel ones, have a different purpose - for cutting meat, for cleaning vegetables, for bread and more.

Their color is also very important - they are mostly divided into black and white knives. Black is for professional use and is significantly more expensive. Their blade has a higher resistance and hardness, but if you are not a chef in a restaurant, you can easily buy a knife with a white blade.

Knives from registered brands have a strict classic design, while the others have a mixture of styles. Manufacturers of quality ceramic knives they rely on snow-white color, even their knives are slightly transparent, while in Chinese production, for example, they can be gray-yellow or ivory. This is due to the fact that they are made with accelerated technology, their firing is done with insufficient time and as a result, these knives are unreliable, quickly dull, prone to breakage and staining.

When choosing a ceramic knife, trust registered brands and do not forget to take it with a fuse that will store it and protect it from breaking.
