Before you start cooking them, you need to get the shrimp. If you take fresh shrimp, you will need to clean and boil them lightly. The main recipe for cooking is one, but its variations at the end are three - all with indescribable and unique taste.
Saganaki shrimp with tomato sauce and feta
Necessary products: ½ kg of shrimp, ½ cup of olive oil, 1 can of diced tomatoes (or 1-2 large tomatoes cut into small pieces), 1 cup of ouzo, white wine or cognac, 200 g of feta cheese, 1 onion, 2 cloves of garlic, 1 green pepper, oregano, thyme, salt and pepper
Method of preparation: Heat some olive oil in a pan. Add 2 cloves of garlic, finely chopped. Then add the shrimp. Leave on the fire for a few minutes until they release their juice. Sprinkle with a little salt and pepper. After 2-3 minutes, the shrimp are watered with ouzo and left to simmer for a few more minutes on low heat.
Meanwhile, lightly fry the sliced onion in another saucepan. Add the finely chopped tomatoes and the pepper, cut into circles. Sprinkle with oregano or thyme on top and cook for a few minutes. Finally add the tomato sauce and shrimp. The mixture is left to simmer on low heat, and the crushed cheese is added on top.
Another option is to pour the mixture into pots. Sprinkle with cheese on top and bake in the oven.
The third option is to transfer the resulting mixture to a pan or yen pot. Sprinkle with grated cheese on top and bake in the oven at 180 degrees for about 10-15 minutes. It's done when the cheese melts. Each of the options can be garnished with tomatoes, sliced on top.
