Step 7: Slow cooking makes tough meat tender and tasty. Periodically check the consistency of the meat. The liquid level must be maintained, so if it evaporates, add it to the previous level. The meat will soften in about 1.5 - 3 hours. As soon as you feel that the meat softens when pierced with a fork, then it is ready. If you continue to roast, the meat will dry out.
