We all, or almost, all love lentils. Apart from being very tasty, it is also terribly useful. Apart from Bulgaria, lentils are consumed in Turkey, Russia, India and others. The lens originates from the Middle East.

In the past, the history of the people of that time paid special attention to the lens and put it in one of the first places on their table. Lentils replaced meat and fish, which were quite expensive at the time because they also contained protein and were a worthy substitute for them.

Nowadays, lentils enter the culinary traditions of countries such as Canada, India, Turkey and the United States. In Bulgaria we use lentils that are produced in our country or in Turkey. The lens can be in many colors - red, brown, pink, yellow, green, black, as well as green French lentils.

1. Brown lentils are the most famous in Bulgaria. You may come across other names, such as Egyptian. It is very tasty and has a pleasant aroma, that's why we love it so much. Apart from being tasty and fragrant, this type of lentil is also very easy and quick to prepare.

2. Green French lentils have a color that is somewhere between black and green and just like brown has a very rich aroma.

Its taste is very similar to that of hazelnuts. Initially, this type of lentil was grown on the volcanic peaks of France. But now, strange as it may sound, it is grown in Italy and North America. This type contains a significant amount of fiber, which, in addition to being delicious, also makes it very useful.

3. Red lentils - in general, the scales of this type of lentil are brown, but before it reaches us, these scales are removed and only the red and tasty grains remain underneath. It is prepared very quickly, so it is suitable for many dishes.

4. Black lentils - this type of lentil is also called "beluga" by the Russians, because its grains are very similar to the caviar of fish of the same name. It is not common in our country and that is why it is not so popular.

Apart from the lentil itself as a product, it can also be used to make flour, which in our country can not be found anywhere, except in special diet stores. Bread and porridge are made from it. Lentils contain almost all B vitamins.

It is also a good source of iron, magnesium, phosphorus, zinc, selenium, calcium, potassium, copper, manganese. When buying a lens, look (if the package is transparent) for the expiration date and its origin. Also make sure that there are no black spots on it. If you want to store it for a long time, you should keep it in a dry, cool and dark place, where you will be sure that no moisture will enter, because the lens can germinate.

And when cooking lentils, we advise you to wash it several times through water until you see that after each wash the water clears and finally becomes clean. This means that your lens is clean and ready to use.
