The meccites are a traditional Bulgarian breakfast. Bulgarians like to eat them in the morning with powdered sugar. This is a pasta breakfast fried in a lot of fat. But how do we make the soft ones fluffy and really soft, just like our grandmothers used to make them?
There are different ones recipes for mekici, the main differences being in the leavening agent and the milk. In the Silistra region, the mekitsa dough is prepared with yoghurt and baking soda and left to mature for 30 minutes until it rises.
In a recipe from the village of Pastren, Stara Zagora region, mekis are made with yeast and yogurt, and in Aytos - with yeast and fresh milk. When made with yeast, it must first be diluted to a slurry with a little water and flour and leave to rise in the heat.
It is recommended to shape mekitsite for frying to be done with wet hands. Sometimes the shredded cheese can be contained as a filling in the dough.
Here the secret of delicious mekis!! In fact, it is baking soda. To make them fluffy and airy, put a pinch of soda on them. Here is the complete recipe for mekitsa with soda:

Necessary products:
flour
1 cup yogurt
1 tsp soda
1 tbsp. sugar
1 tbsp. sol
200 ml. oil (for frying)
Method of preparation: First, sift the flour into a sieve and make a well in a tray. Put the yogurt in the flour. Be sure to dissolve the soda in the yogurt so that it is not felt later when consumed in the finished state. Add sugar and other products. Stir and let rest for 20-30 minutes, then roll out the dough and cut into rectangles. The meccites fry on both sides until cooked in very hot oil.
Classic mekitsa with yeast

Necessary products:
1/3 cube of yeast (14 g)
a few tablespoons of yogurt
300 ml of water
500 g flour
1 tbsp. sol
Method of preparation: Sprinkle the yeast with a pinch of sugar and a little water and leave to rise. In a bowl, mix the yogurt, salt and water and add the foamed yeast. Knead a soft dough. Allow to rise. You can knead it in the evening and put it in the fridge (but it should be greased with oil) and fry in the morning. This dough is also suitable for pizza.
