The carp is a freshwater fish that is found in many Bulgarian reservoirs. Its characteristic feature is that it is swampy and in addition to rivers and lakes it is also found in more stagnant reservoirs. Here we will show you how to properly prepare it, and we will pay attention to how to remove the characteristic smell of it and all marsh fish.

It is always advisable to choose already peeled and gutted carp, at least because cleaning them is too annoying activity, which is also associated with "pogrom" in the kitchen - figuratively speaking.

However, the most important thing for a fish is to be fresh, and if you have managed to get a freshly caught carp, then you are really lucky, and we are here to show you how to clean the carp.

First remove the fin with a knife. This is the part that is on the back of the carp and that is not suitable for consumption.

The fins are also removed with either a knife or scissors.

It is very important to separate the so-called mother-of-pearl button. Many also call it a bitter button, because if you do not remove it, any fish dish that you cook with the fish will acquire a bitter taste. This knob is located at the very top of the carp's head and actually looks like a knob.

It takes a little more patience to remove the scales. A good technique is to leave the fish in boiling water for a few seconds. This will make removing the scales much easier. It is important to remove them with a knife and on the opposite side of their growth. The "pogrom" in the kitchen, which we mentioned at the beginning, occurs at removal of scales.

Some recommend do not soak the fish in water, and wash thoroughly under running cold water. According to other theories, however, the fish should be soaked in water to which a few tablespoons of apple cider vinegar have been added. In this way, the characteristic aroma of all fish that inhabit swamps and stagnant reservoirs is removed.

Another proven method for removing unpleasant odors is like rub the fish with lemon and salt and let it stand for 2-3 hours. This is done after washing the fish, of course.

You are now ready to prepare a fish dish with carp of your choice. The fish is suitable for fish soups as well as for frying, breading, grilling and of course - for carp in the oven. After all, we all love to eat the typical St. Nicholas stuffed carp.

To conclude, we will add that if you cook St. Nicholas carp, according to folk beliefs, you should not throw his bones in the trash, but bury them, burn them or put them in a pond. This is done for fertility and peace in the family.
