Necessary products: 3 pcs. fish fillets of your choice, 1 tbsp. olive oil, 1 tbsp. butter, 150 ml white dry wine, 150 ml chicken broth, juice of 1 lemon, 1/2 lemon, 2 tbsp. capers or 2 pickles, finely chopped, 2 small hot peppers, 2 tbsp. butter, 1 tbsp. fresh dill, salt, pepper

Method of preparation: The fillets dry well. Salt and sprinkle with black pepper. Allow to rest for 5 minutes.

Heat the butter and olive oil in a suitable pan. Before being placed in the fat, the fish fillets can be rolled in flour if desired. Fry until golden on both sides - 2-3 minutes on each. Remove to a plate.

Pour the wine into a pan and let it simmer for 1-2 minutes. Add the chicken broth, lemon juice, half a lemon and the peppers, cut into circles. Allow to simmer until the sauce is reduced by half.

The fish fillets are returned to the pan. Add the capers and butter. Stew under a lid for 4-5 minutes.

The fish is served topped with 2-3 tablespoons of sauce, a few slices of lemon and pepper. Sprinkle with finely chopped dill or parsley.

Once slightly softened, add the cream. Stir and add the mustard, the remaining 1 glass of wine and the ground almonds. Add salt to taste and simmer on low heat for about 10 minutes. Finally, season with black pepper.

Place the fillet in a lightly greased baking tray. Pour the cream sauce on top. Bake for about half an hour in a moderate preheated oven. The dish is served sprinkled with chopped parsley and a garnish of potatoes.
