At the mention of carnival we, the Bulgarians, immediately think of those fluffy cakes and other similar products that we are used to calling carnival.

But Maslenitsa (deliberately written in capital letters) is one of the most revered and cheerful holidays of the Russians. Again, not some blondes, but almost all the people who lived in the USSR for decades. Ie although it is known as a Russian holiday, and probably as the oldest Slavic pagan holiday, Shrovetide is celebrated as solemnly as in Russia, so much in Ukraine, in Belarus, and so on.

Shrovetide is associated with lighting fires, joking fistfights, dancing a lot, winter skating and sledding, but mostly eating the belly of Russian pancakes, known to us as pancakes.

This holiday is celebrated for 7 days, and the most solemn is at the end - Sunday. Every day a different party is organized, but invariably there are pancakes on the tables.

In Bulgaria, in fact Shrovetide coincides with Sirni Zagovezni, and among the Russian peoples the other name of the holiday is Cheese week or in translation - cheese Sunday or cheese Sunday.

There are many recipes for pancakes, but it is important to specify that the most popular are pancakes made with yeast and buckwheat flour. Scarlet dough pancakes are also revered. Regardless of which recipe you choose, it is important to mention that the Russians consume pancakes with jam, cheese, cream or caviar.

In this case, we chose to show you how to prepare boyar pancakesbecause they are an integral part of Russian culinary history, traditions and respectively the celebration of Maslenitsa. We emphasize that it is good to prepare everything with homemade products and especially the milk to be homemade, because for the original Russian recipe you will also need cream.

In order to be able to prepare boyar pancakes you will need 3 tsp. buckwheat flour and 2 tsp. wheat flour, 4 tsp. milk, as well as 1 tsp. cream (thick), 1 tsp. cream, 5 eggs, 100 g butter and 30 g yeast. Add salt and sugar to flavor.

Half the milk is boiled and cooled to about 25 degrees. Mix with the yeast and in a suitable bowl together with buckwheat flour prepare yeast.

After the yeast has bubbled (about 2 hours), add the remaining milk, the yolks mixed with the cream, the butter and the wheat flour.

Season with salt and sugar and wait until foaming. When the dough swells, add the whipped egg whites to it carefully and with gentle stirring as a caress. Wait again for about 20 minutes and from the dough thus obtained are prepared the famous boyar pancakes, which are highly respected precisely as recipe for Shrovetide.
