If you still want to remove the skin before roasting, blanch the hazelnuts in boiling water in which you have dissolved 2-3 tbsp. bicarbonate of soda. You will notice how the color of the water darkens greatly. Then just rinse the hazelnuts under running water in a colander - the skin falls off only with light rubs.
To roast the hazelnuts, you need raw nuts and, if desired, salt (you can skip it). If you are going to salt them, you need to moisten them a bit and add salt, then stir.
Bake at about 160-180 degrees for 10-12 minutes. Check the nuts every few minutes and stir. When they are ready, take them out of the oven and let them cool.
In case you don't want to add salt, just bake them. And when they are ready, put the nuts between two towels and rub lightly - this way the hazelnut flakes will fall out quite easily.
If you want, you can also cook them in the microwave. Half a kilo hazelnuts Bake for 3 minutes and it is especially important to stir them for a minute.
Another way is, just like with almonds, to break the egg white and roll them in it. This will make them more crunchy. You know that nuts, whatever they are, are quite tender and roast very quickly. Do not leave them unattended, because if you burn them, they will become bitter.
