In Bulgaria, the evergreen carob tree is distributed mostly in the Balkan Mountains and along the Black Sea coast. It is grown mainly for its edible and sweet pods, from which flour is made. In the past they were used as a natural sweetener.

In recent years, locust bean flour has become a favorite over cocoa, mainly because of its specific taste and low calorie levels. Carob is often used as an alternative to chocolate because it does not contain caffeine.

Carob flour can be used to prepare many delicious and unusual desserts. Here are some ideas:

Necessary products: ⅓ h.h. locust bean flour, 3 tbsp. whose seeds, 1 tsp. walnuts, 1 tsp. raisins, 4 dates

Method of preparation: All products are poured into a blender and beaten until a homogeneous mixture. From the obtained dough is rolled out, from which cakes with molds are cut. They are placed in the freezer for a while to tighten and - done. They are not baked.

Carob flour cake

Necessary products: 1 and 1/2 tsp. flour, 1 tsp. sugar, 1/4 tsp. locust bean flour, 1/3 tsp. oil, 230 ml of brewed coffee (or dissolved instant coffee), 1 tsp. apple cider vinegar with 1 tsp. baking soda, vanilla, a pinch of salt

Method of preparation: The oven is heated to 180 degrees. The two flours and sugar are mixed. A well is made in the middle, in which the coffee, oil and vinegar are slowly poured, with the baking soda dissolved in it. The mixture is stirred until a homogeneous mixture is obtained. Pour into a greased pan or covered with baking paper. Bake for about 25 minutes, periodically checking with a toothpick.

Necessary products: 1 packet of butter, 120 g of sugar, 1 packet of vanilla, 200 g of flour, 60 g of molasses, 1 packet of baking powder, 60 g of locust bean flour, 1 egg, ½ tsp. ground hazelnuts

Method of preparation: Mix the flour, locust bean, hazelnuts and baking powder. In another bowl, beat the sugar and softened butter. Add the egg, molasses and vanilla. Mix well and slowly add the dry mixture to them. Knead the dough, which is made into balls the size of a walnut. Arrange in a pan covered with baking paper and bake in a preheated oven at 180 degrees for 15 minutes.

Sweets with almonds and carobs

Necessary products: 1 packet of butter, 5 tbsp. locust bean flour, 1/2 tsp. brown sugar, 1 egg, 50 ml maple syrup, 1 tsp. sifted flour, 1 packet of baking powder, 1 pinch of salt, 20-25 almonds

Method of preparation: The flour, baking powder and salt are sifted and mixed with locust bean flour. Beat the butter and sugar with a mixer. When they become creamy, maple syrup and egg are added. It breaks again.

To the resulting mixture add a few tablespoons of the dry mixture. Stir until the mixture is finished with carob. It is best to use a wooden spoon.

About 20-25 balls are formed from the resulting dough. Arrange in a tray covered with baking paper. They lightly press their palms against it and stick an almond in each. The cakes are baked for 13-15 minutes at 180 degrees in a preheated oven. When ready, leave for a minute or two to cool, then transfer to a wire rack to cool.
