Potatoes are stored very well in wooden crates as they are ventilated. Crates should not be in close contact with walls. They must be raised at least ten centimeters above the floor.

Before storing potatoes for winter storage, they should be air-dried for a few hours. Excess moisture causes rot.

Medium-sized potatoes are stored for the longest time, larger ones can be kept only until the middle of winter, because then their taste deteriorates.

Potatoes are stored at three degrees. At zero temperature and below it, the starch contained in potatoes turns into sugar. Once cooked, such potatoes are unpleasantly sweet and porous.

At a temperature of four degrees above zero, the potatoes germinate and the so-called eyes - sprouts that appear, accumulate harmful solanine. Sprouted potatoes are discarded.

To protect the potatoes from excess moisture, cover them with bags filled with sawdust. You can also arrange a few heads of red beets on the potatoes.

Not only excess moisture but also lack of moisture has a bad effect on potatoes. If you store the potatoes in an apartment where the air is quite dry, put a plastic bottle with a cut throat in the crate or bag, in which you put a damp cloth.

Drill many holes in the bottle. The water will evaporate gradually and will not allow the potatoes to dry out. Store potatoes in an apartment by covering them with a dark cloth or putting them in a dark cloth bag.

And if you have a yard, dig a hole one meter deep. Pour the potatoes in layers, pouring dry straw between each layer. Stack five inches of straw on top. Cover with boards, stack straw and dice on them. This way the potatoes will be preserved until spring.
