Pimento tree is evergreen and reaches 9 meters in height. It blooms in small white flowers, gathered in clusters. They produce spherical fruits, from green to reddish-brown, with one seed each.
They are collected before changing color, then dried for 1-2 weeks. The period may be longer as the flesh shrinks into a thin shell around the seed.
The small grains of allspice have an extremely intense aroma and spicy taste. The spice combines the taste of cloves, nutmeg and cinnamon.
Hence its English name allspice or all spices in one. Its complex taste and aroma do not allow it to be used in large quantities.
