Quince jelly is a delicious light dessert. Ingredients: about 1.5 kg of well-ripened quinces, 500 grams of sugar, 1 packet of gelatin, half a teaspoon of rum.
The quinces are washed well and wiped to remove the hairy layer. They are cleaned from the core and the rest is cut and put in a juicer.
The juice is left for about an hour so that the fruit mixture settles to the bottom and then the resulting juice is carefully poured. The remaining mixture in the juicer is mixed with the sugar and left overnight.
The resulting juice is mixed with the other juice, gelatin, previously left to swell, is added, and everything is ground in a food processor at minimum speed until the sugar is completely dissolved.
Quinces in vanilla syrup are an interesting dessert with an unusual taste. Ingredients: 5 quinces, 250 grams of sugar, 500 milliliters of water, 1 lemon, 1 vanilla, 5 grains of black pepper. Put the vanilla, pepper, sugar, squeezed lemon juice and water in a large non-metallic saucepan. Leave on low heat until the sugar dissolves.
Quinces are cut into quarters and cleaned of seeds. The pieces are placed in the boiling syrup and must be completely immersed in it. Cover with parchment and leave on the stove for about half an hour until the quinces soften.
Using a slotted spoon, place the pieces in a plate and simmer on low heat for another 10 minutes, until it is reduced to one third of its original volume. Pour the syrup over the pieces and serve hot or cold, garnished with cream.
