1. In a small bowl, mix the vanilla protein and unsweetened almond milk and mix until smooth. Then add the peanut butter and stir again.
2. Melt the chocolate chips in a small pan over low heat.
3. Arrange 8 silicone baking tins. Pour a small layer of melted chocolate chips into each of them. Arrange the tins in a pan and put it in the freezer for about 15 minutes.
4. In each baking dish add one teaspoon of the prepared mixture of protein, almond milk and peanut butter. Press lightly with a spoon, leaving a little space for the chocolate.
5. Distribute evenly the remaining amount of melted chocolate chips in each of the baking tins.
6. Return the tins to the freezer for about 30 minutes. Remove the cupcakes from the tins and wrap them in foil. Store protein muffins in the freezer until serving.
Protein cookies with chocolate chips
Required products for 12 cookies:
- 28 g of coconut flour;
- 84 g of vanilla whey protein;
- ¾ tsp baking powder;
- ½ tsp xanthan gum;
- ¼ tsp salt;
- 1 tbsp. coconut oil;
- 1 large egg, room temperature;
- 1 tsp. vanilla extract
- 60 ml of agave;
- 2 tbsp. stevia powder;
- 1 tbsp. unsweetened cashew or almond milk drink;
- 45 g of dark chocolate chips;
Method of preparation:
1. In a bowl, mix the coconut flour, protein, baking powder, xanthan gum and salt.
2. In another bowl, mix the coconut oil, egg and vanilla. Add the agave and stevia to them and stir until a homogeneous mixture is obtained. Then add the unsweetened cashew milk or almond milk. Finally, add the mixture of coconut flour, stirring constantly until cooked. Let the protein cookie dough rest for 10 minutes.
3. While the dough rests, preheat the oven to 165 ° C and cover a baking tray with parchment paper.
4. Add 30 g of chocolate chips to the cookie dough. Cut the finished dough into 12 circles using a cup or mold and arrange them in the pan.
5. Carefully sprinkle the circles with the remaining chocolate chips, pressing it to hold.
6. Bake at 165 ° C for 9-11 minutes. Allow to cool for about 10 minutes before eating.
