On October 14, according to folk beliefs, Winter Petkovden is celebrated. On this day the memory of Saint Petka Tarnovska is honored and a special ritual bread is prepared in her honor.
In folk beliefs, St. Petka is accepted as the patron saint of the family, home, birth and children, which is why special sacrifices and pies are prepared.
One of the pies is called St. Petka and it is obligatory for the whole family to bow before it three times before sitting at the table. The bread and the house are sprinkled with holy water to bless the whole household.
The ritual pie is placed on a man's shirt, and a bowl of salt and a glass of wine are placed next to it. In some places they spread the bread with honey. The bread must be broken by the oldest woman in the family.
The traditional ritual pie is made from 1 kilogram of flour, 500 milliliters of milk, 2 eggs, 2 tablespoons of sugar, 2 tablespoons of salt, 1 tablespoon of oil and about 20 grams of yeast.
The yeast is dissolved in the milk and left for a few minutes. Put half of the flour in a separate bowl, add the dissolved yeast with milk, salt, sugar, oil and mix until you get a mixture similar to porridge.
Leave the dough to rise in the heat for about 20 minutes. Once it rises, add the beaten eggs and the rest of the flour. Knead the dough, then hit it on the counter 100 times.
Grease and flour a pan, and put the dough in it, shaped like a pie. Spread with beaten egg yolk and leave to rise for about 30 minutes. Bake the pie for 40 minutes in a moderate oven.
Today, women distribute cakes so that animals whose breeding begins today can be born healthy.
On the table for Friday mutton casserole, [kurban soup], sarmi with vine leaves, leek pie or other vegetable dish should also be present.
Today, according to folk beliefs, the end of agricultural work is coming to an end, as the autumn sowing is completed and this year's harvest is being gathered.
