Baharat is an Arabic universal blend of various spices that are typical of Middle Eastern cuisine. Just a pinch of the unique mixture changes beyond recognition the taste of various sauces, soups, cereals, vegetables, legumes and meat.

It can be used for rubbing fish, poultry and others, mixed with olive oil and used as a vegetable marinade. It is also mixed with garlic, parsley and olive oil to acquire the consistency of a paste. Allspice is a fragrant, warm and sweet mixture that usually contains a combination of black pepper, coriander, cumin, allspice, cardamom, cinnamon, cloves, paprika and nutmeg.

It can mostly be found in grocery stores in the Middle East, but you can also easily prepare it in your own kitchen. To make the aromatic spice at home, it is recommended to stop at whole spices, as they retain their aroma more during heat treatment.

In some recipes you can also see additions such as sumac, saffron, turmeric, and hot peppers. The Turkish version of Baharat also includes dried mint. In North Africa, dried rose petals were often added to the mixture.

Whether you buy a ready-made mixture or prepare it at home, it should be stored in airtight containers, away from sources of heat and light, for three months.

Here is a recipe with which you can prepare your own Baharat. You will need: 1 tablespoon black pepper, 1 tablespoon cumin, 2 teaspoons coriander seeds, 1 teaspoon whole cloves, ½ teaspoon cardamom seeds, 1 ½ tablespoons paprika, 1 tablespoon cinnamon, ¼ ground nutmeg.

Heat the pan over medium heat. Set aside the red pepper, cinnamon and nutmeg. Pour the remaining spices into the pan and leave them for about 3-5 minutes, stirring regularly so as not to burn.

Then transfer them to a bowl and allow to cool completely. When cool enough, mix them with paprika, cinnamon and nutmeg. Put them in a blender and grind them. Store the resulting mixture in an airtight glass jar.
