This unknown cereal is a perennial herbaceous plant that until recently was used mainly for commercial purposes, as a food thickener and in the pharmaceutical industry. Now, however, more and more people are convinced of its nutritional and taste qualities.

The homeland of the macaw is the tropical regions of South America. Latin Americans produce flour from the crop by extracting starch from the plant, washing its roots, scraping them, and then soaking and crushing them. The finished consistency is passed through a sieve and dried.

In recent years, however, the technology has improved and the flour from macaw roots is obtained at the factory. The resulting powder is widely used in pharmaceuticals, but also increasingly in the culinary industry.

Ararute flour is extremely useful, but is more often added as an impurity to other cereals. For every 100 grams of araut flour, there are about 380 calories.

It can also be used as an additive to chalk, gypsum, flour, wheat, rice and starch. Store in a dry and cool place.

The health benefits of this cereal are undeniable. Ararut is rich in vitamin A, contains folic acid and B vitamins. Contains calcium, manganese, potassium.

It contains protein and dietary fiber. Ararut can be used as a remedy for diarrhea due to the high content of starch in the roots, as well as to soothe irritated and inflamed skin.

In Bulgaria, ararut is almost unknown, but finds its use as a thickener of sauces and fillings for various confectionery. It is very suitable for thickening more acidic liquids and does not leave any smell or taste of starch in food.
