Autumn is the season of apples and the best time to make apple charlotte - one of the most famous English pastries. It is believed that the apple charlotte was created in the late eighteenth century.
Charlotte is named after Queen Charlotte, wife of George III. In the nineteenth century, variations of charlotte appeared - with pears and apricots.
The recipe for apple charlotte is very easy, and the ingredients for the cake are few: four medium apples, preferably sweeter, one tea cup of flour, four eggs, two thirds of a cup of sugar, one vanilla, a pinch of cinnamon, powdered sugar, one teaspoon baking powder, one teaspoon butter.
Peel the apples, remove the core, cut into thin semicircles. In a mixer, beat the eggs and sugar until white foam, gradually add the flour, vanilla, cinnamon, baking powder and sugar.
Continue beating until smooth. Grease a baking dish with butter, sprinkle with flour or breadcrumbs. Pour half of the dough, arrange the apples and pour over the rest of the dough.
There are different versions of the preparation of apple charlotte, but in general one rule is followed - the cake is placed in an oven heated to one hundred and eighty degrees.
Bake for about half an hour until golden. Check that the dough is baked well with a toothpick - if the dough does not stick to it, the cake is ready.
Once the cake is baked, do not take it out of the oven immediately, but open its door and let it stand in the heat for another fifteen minutes.
Otherwise it will fall. Once the cake is ready, sprinkle it with powdered sugar, then sprinkle with cinnamon. Decorate the edge of the cake with walnuts and raisins.
