The unusual recipe was written in the Anglo-Australian cookbook, informs AFP, quoted by BGNES. It is considered to be Australia's first cookbook describing recipes with meat from Australian animals. The guide was shown to the general public in the southern state of Tasmania 150 years after its publication.
Pan Jam: Roast the kangaroo tails well together with the fur. Once you notice that they are almost ready, peel them and cut them into pieces. Then place them in a pan with a few pieces of fat and add a few mushrooms and pepper. Bake the dish until ready, says one of the recipes.
The interesting culinary guide was compiled by Edward Abbott. He decided to collect local recipes in the early nineteenth century because he had serious financial problems. Abbott hoped that the book could help him get rich quick and finally get out of the predicament.
The recipe for a kangaroo brain fried in emu fat, which we have already mentioned, is one of the most remarkable in the book. Another impressive dish described in Abbott's manual is roasted emu meat, which the author claims tastes like roast beef.
The culinary reading will be stored until the end of July in a museum in Hobart / the capital of Tasmania /, where it will be exhibited to visitors. In addition to local recipes, the book reveals the difficulties to which the first Australian settlers were subjected.
In the early days of white colonialism in Tasmania, eating local wildlife was not uncommon among convicts, the museum curator said.
The cultural institution where the book is on display was founded by members of the Alport family. They are also one of the first people to use local animal species in cooking and even document their recipes.
