Necessary products:
For the dough: 2 tsp flour, 2 eggs, ½ tsp. lukewarm water, 1 incomplete tsp. sol
For the stuffing: 200 g of cottage cheese, 60 -80 g of yellow cheese, 1 egg
Method of preparation: The dough is kneaded from the indicated products. Cover with a towel and leave to cool for 30 minutes. It is rolled on a crust 2 mm thick. Circles are cut out of it with the help of a water glass or a ring.
The stuffing is prepared from the beaten yellow cheese and cottage cheese with the egg and the grated cheese. Put a little of the stuffing in each circle. The ends of each of them are smeared with beaten egg, folded in half and pressed at the end with a fork to stick together.
The resulting crescents are placed in boiling salted water for 5 minutes. Remove with a slotted spoon, drain and place in a heated plate. Top with hot butter or oil, as well as grated cheese, if desired. Serve with a sauce of your choice.
Salzburg dumplings
Necessary products: 3 eggs, 60 g butter, 1 tsp. sugar, 1 tsp. flour, 3/4 tsp. fresh milk, 1 vanilla powder, vanilla sugar
Method of preparation: Half of the softened butter is whipped to a froth. Gradually add the yolks. The whites are smashed in the snow. Slowly add the sugar and continue beating until hard snow is obtained. The result is mixed with the processed yolks. Carefully add the flour and pour into a bowl with the milk boiled with the remaining butter and vanilla. The result is baked in a strong oven for 6-8 minutes. Take it out, cut it into pieces, which are arranged in a dish and sprinkled with vanilla sugar.
Dumplings with jam
Necessary products: 400 g flour, 1 egg, 100 g butter, 1 tsp. water, 1 pinch of salt, 1 tsp. puree (or marmalade) of prunes, 1-2 dry small loaves, 3-4 tbsp. sugar
Method of preparation: Knead a soft dough from the flour, egg, half of the butter, salt and water. Leave to stand for 30-40 minutes. It is rolled into a thin crust, from which squares are cut.
Put a little marmalade on each square. Fold diagonally, pressing at the edges to stick. Each is boiled for 5 minutes in slightly salted boiling water.
The dumplings are served sprinkled with crushed dry bread, covered with the remaining melted butter and sprinkled with sugar.
