Raspberry jam. Marmalade can be prepared from both cultivated and wild forest raspberries. You need to choose fresh and healthy well-ripened fruit. They must be well cleaned both from the stalks and from other unnecessary elements such as twigs, leaves and so on.

The resulting mixture must pass through a juicer. The goal is to remove the seeds. The raspberry puree is poured into a saucepan or other container. 600 g of sugar is added to each kilogram of porridge.

The mixture is boiled first over moderate heat, then over low heat, stirring constantly. The finished jam is poured into pre-cleaned and dried jars while still hot. They close well, store in a dark and cool place.

Raspberry compote. Wash the raspberries with running water to avoid injury, then place one or two handfuls of the fruit in each jar. Add 5-6 tablespoons of sugar. Fill the jars with hot water (about 90 C) and close well.

Place in a large container filled with water, after it boils, detect for 10 minutes. This is the required time for sterilization. Then the jars should cool for no more than 20 minutes.

Raspberry syrup does not require heat treatment. Cold cooking preserves the natural aroma of raspberries. To 350 ml of juice add 650 g of sugar and 3 g of tartaric acid. The syrup prepared in this way is poured into dry bottles, which should be stored in a dark and cool place.
